Black sugar, sweet potato and ginger dessert


600 g sweet potato
4 big chunks of ginger
One small bunch black sugar
1. Put the peeled sweet potato, chopped ginger and water in a saucepan.
2. Bring the mixture to the boil. Then turn down the heat and cook at mild heat till the sweet potato is soft (this takes around 15 minutes).
3. Flavor the dessert with black sugar.

This is my favorite Taiwanese dessert in the winter. Nothing quite like eating on a cold winter day in front of a steaming pot at Ice Monster while crazy people eat the shaved ice nearby.
