White Radish Cake
Preparing the rice mixture
1 cup long grain-rice, cleaned
2 cups water
2 teaspoon of corn flour
Instruction
1. Soak the cleaned rice in 2 cups of water for 6 hours, or overnight.
2. Place the rice and water in a food processor. Blend the mixture at high speed until it's very smooth.
3. Add the corn flour into the rice mixture, and mix well.
Preparing the radish mixture
6 cups grated radish
5 tablespoons cooking oil
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon cooking oil to oil the mold
Instruction
1. In a wok, sweat the grated radish with 5 tablespoons of cooking oil, at medium heat. When the radish is cooked, flavor it with salt and white pepper. Turn off the heat and put aside.
How to create radish cake
1 .Pour the rice mixture into the radish wok, and cook with a very mild heat. Stir it very slowly. The radish and the rice mixture is forming like a very thick paste.
2. Oil a mold with 1 teaspoon cooking oil. You can use any flat-bottomed heat-resistant container for the mold. A container with straight sides is best.
3. Pour the radish and rice mixture into the oiled mold. Steam it over medium heat for about 30 minutes. Or simply steam it in a rice cooker.
4. When the radish and rice cake is cooked. Cool it down, then remove the cake from the mold.
Notes
1. To serve the radish and rice cake; cut it into 3cm squares, brown in a oiled pan to make both sides crispy.
2. Other options instead of radish are taro, or yam.
3. To give more flavor, sliced shiitake mushroom, shallot, dry shrimps, minced pork or white pepper can be added when frying the radish.
