This is a very simple method of preserving fish for up to a week - without freezing, which damages the fish.

Uncooked fish (for example salmon, cod or sword fish) marinated in salt and olive oil can be kept in the fridge for up to a week.

1. If the fish is whole, cut it into slices no more than 1-1.5 cm thick.

2. Use your finger or a small brush to spread a teaspoon of salt on the fish, do not miss any part, then do the same procedure with a spoonful of olive oil.

3. Keep the fish in the refrigerator, not the freezer. The olive oil protects the fish from moisture and makes it tender.

Notes: If we just keep fish in the fridge without oil or salt, the fish can't really stay fresh for more than two days. Freezing will preserve it much longer of course, but this spoils the texture and flavor. Marinating the fish with olive oil is also a way to mature it and improve the flavor.
