Black sugar and sesame buns (dumplings)

Filling ingredients
200g ground black sesame
170g black sugar
10 tablespoons cooking oil


1. Grind the sesame seeds in a food processor until very fine.
2. Mix all the ingredients well.

Dough Ingredients
500g all purpose flour
300ml warm water
2 teaspoons dry yeast
25g sugar or black sugar
25ml cooking oil

1. Mix the yeast and the sugar in the warm water, and let it sit for about 5 minutes. Add the mixture and the rest of the ingredients into the flour, and knead for about 15 minutes or until the dough becomes elastic. Then cover the dough with a wet cloth or tea-towel. Leave for 30 to 40 minutes.
2. Roll the dough into long, round shape. Divide the dough into 40g balls. Flatten the ball into an 8cm (about 3 inches) wide round shape.

3. How to put the dough and filling together to make the dumplings
Fill the circles of dough with the filling, and fold the edges of the dough together so that the filling is enclosed.  Take care not to overfill them, because oil makes it hard to pinch the dough together (it won't stick to itself when it's oily).

4. How to cook the black sesame buns
When the sesame buns are completed, let them sit and rise for about 30 minutes. Then steam at high heat for 8 minutes.
