The procedure for making dumpling dough

Ingredients

3 cups of all purpose flour, 1 cup hot water, ½ cup cold water.

Procedure for making dumpling dough:

1. Put 3 cups of flour into a mixing bowl, and mix in 1 cup of just boiled water. Stir the mixture with a stick or a fork, until the flour become flaky. (see Note 1)
2. Pour a ½ cup of cold water into the dough, and keep mixing, until it become a ball shape.
3. Sprinkle some flour on a wide flat surface, such as a countertop, and place the dough on the surface.
4. The dough now should be sticky and warm, leave it alone for a couple of minutes, to allow it to cool down.
5. When you can feel the dough has become cooler, and dryer, you can start kneading the dough very gently. Do not try too hard, because the center of dough is still very warm. While kneading the dough, if you find the dough is still very sticky, sprinkle a little flour on your hands and working surface, but not directly on the dough.

Toasted eggplant with 5 flavors sweet and sour sauce

Dressing Ingredients

4 tablespoons vinegar
4 tablespoons sugar
3 tablespoons soy sauce
1 teaspoon freshly chopped garlic
1 tablespoon freshly chopped ginger
1 tablespoon freshly chopped coriander
1 teaspoon freshly chopped chili (optional)


Cooking Ingredients

3 long, slender purple eggplants


Instructions

1. Mix all the ingredients well. You can adjust the amounts slightly to taste, and find out the balance of ingredients you prefer.
2. Chop the eggplants into sections 4cm long, and then carefully slice each piece into two halves lengthwise. Soak the chopped eggplants in 1 tablespoon of salt and 2 cups of water for about 2 hours.
3. Drain away the salty water from the eggplant. Cook the eggplant in the toaster oven or oven with 220C, for about 15 minutes, or until they are cooked.

Toased mushrooms with Taiwanese ginger dressing

Dressing Ingredients

2 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon white sesame oil
1 tablespoon mashed ginger
2 tablespoons chopped coriander
1 teaspoon chopped chili (optional)

Cooking Ingredients

200g fresh shiitake mushrooms, chopped into quarters
200g fresh king oyster mushrooms, chopped 1.5cm length

Instructions

1. Mix all the ingredients well. You can adjust the amounts slightly to taste, and find out the balance of ingredients you prefer.
2. Cook the chopped mushrooms in the toaster oven or oven at 220C for about 15 minutes, or until they are cooked.
3. Mixed the toasted mushrooms with the Taiwanese ginger dressing well. Allow it to set for about 30 minutes, then it's ready to serve. Garnish with some sesame seeds if you like.

 

Spicy with sweet and sour sauces

Sweet and sour sauce

4 tablespoons vinegar, 4 tablespoons sugar, and 3 tablespoons soy sauce. Mix well.


Fresh spicy sweet and sour sauce

Freshly chopped chili, 1 teaspoon

Freshly chopped garlic, 1 teaspoon

Freshly chopped green onion, 1 teaspoon

Hot and sour soup

Broth Ingredients

500 ml water
1 cup of chopped pineapple
1 cup of chopped tomatoes
1 teaspoon of salt

Soup Ingredients

½ cup of grated carrot
1 cup of golden mushroom
1 cup of shiitake mushroom
1 cup of wood ear fungus, cut into long strips
½ cup of tofu, cut into long strips

White Radish Cake

1 cup long grain-rice, cleaned
2 cups water
2 teaspoon of corn flour

Instruction
1. Soak the cleaned rice in 2 cups of water for 6 hours, or overnight.
2. Place the rice and water in a food processor. Blend the mixture at high speed until it's very smooth.
3. Add the corn flour into the rice mixture, and mix well.

Green onion pancake (Tsong You Bing), Thick style

Preparing the green onion

Ingredients

400g green onion
2 teaspoons salt
6 tablespoons cooking oil
2 tablespoons white sesame oil
1-2 teaspoon white pepper

Instructions

Black beans stir-fried with chives (Flies heads)

 

Ingredients

3 tablespoons of cooking oil

2 big shiitake mushroom, diced (1 cup)

Spicy Pineapple

Ingredients
Chopped Pineapple, 2 cups
Spicy Sichuan flower pepper oil, 3 tablespoons
Chopped corriander, 1/4 cup
Soy sauce, 1 teaspoon


Instruction
Mix all the ingredients, and serve

Garlic stir-fried dishes

General rules for stir-fried rules
1. Chop all the ingredients into the same shape and size
2. Heat the wok to make sure it is dry, then add the oil.
3. Flavor the oil with garlic, ginger or onion.
4. Add the ingredients which take more time to cook first.
