Gong fu tea: How to make Oolong tea (The Taiwanese-style tea ceremony)
This is the tea ceremony as traditionally conducted in Taiwan and China. It's different from the traditional Japanese tea ceremony.
Equipment
Teapot (use a very small teapot, not a Western-style teapot)
Tea cups (small)
A jug, jar, or similar container (even another teapot). Use a container bigger than your main teapot.
A small bowl or dish (put the teapot in this). The bowl will hold unwanted tea that keeps the teapot warm.
A tray or cloth to contain spills (optional)
A strainer or filter to pour the tea through (optional)
Note: You can buy these tea-making items as a set. This is a good idea if you want to make tea correctly.
Important note: The procedure for making tea is always to pour from the teapot to the jug to the cups. We never pour directly from the teapot into the cups.
Preparation
First we warm the tea pot and jug:
1. Pour boiling water into the teapot, then pour it from the teapot into the jar. Leave the water in the jar.
Next, we rinse off the tea, wake it up, and warm the cups:
2. Put some Oolong tea leaves into the warm teapot. Use enough tea leaves to fill the pot one quarter full. The leaves should be loose, don't push them down.
3. Pour some boiling water into the teapot until it's full. And immediately...
4. Pour the tea into the jug. Then pour the water from the jug into the tea cups. Don't worry, this tea is not for drinking. (If there's excess tea left in the teapot, you can repeat this process to empty the teapot. Don't leave the tea in the teapot). Later, we will pour this tea on the outside of the teapot, to keep it warm.
Making tea to drink
5. Pour more boiling water into the teapot, close the teapot's lid, and wait for 20 seconds.
6. While you are waiting, pour all the tea from the jug and tea cups onto the outside of the teapot, to keep the teapot warm.
7. Pour the tea from the teapot into the jug.
8. Pour the tea from the jug into the cups to serve it.
9. Drink the tea!
(When making more tea, wait an additional 5 to 10 seconds for the tea to brew in the teapot).
Note: You can adjust the brewing time for different types of tea, and depending on your taste.
