Black sugar and sesame pancake (Zi Ma Tian Bing)

Preparing the filling
Ingredients
170g black sugar, 200g black sesame, 10 tablespoons of cooking oil

Instructions
1. Grind the sesame seeds in a food processor until very fine.
2. Mix all the ingredients well.

Making the dough
Ingredients
3 cups all purpose flour, 1 cup hot water, ½ cup cold water
Instructions
Prepare your working surface by dusting it lightly with flour, because the dough will stick to it initially.

Pour the hot water into the flour, and use chopsticks to mix it well. Then pour in the cold water and mix well again. Knead the dough. Then cover the dough with a wet tea-towel or similar cloth. Leave it for about 15 minutes.

Divide the dough into 8 portions. Flatten each portion into a thin disc about 0.2cm thick.

How to put the dough and filling together to make the pancakes
1. Take the first piece of flattened dough. Take the filling that you prepared early and spread it evenly onto the dough. Leave a 1cm (half inch) gap between the filling and the edge of the dough.

2. Roll up the flattened dough and filling from the edge to get a tube of dough. Now roll that tube into a spiral (a vertical spiral like a spiral staircase). Repeat the same process (steps 1 & 2), with the next piece of flattened dough, and continue until they're all done. Try to avoid the filling leaking out, because it burns easily when cooked

3. Go back to the first piece of dough you worked on. Flatten the spiral of dough into a disc about 1cm thick.

4. It's ready to cook.

How to cook the pancakes
Oil a frying pan, cook the flattened dough in the pan at medium heat until it's brown, and then turn it over to brown the other side. Slice into halves or quarters and serve immediately with coffee or tea.
